First one I've ever skinned .... no lie !!! Skins very easy .... no offensive smell what-so-ever .... nice lookin' meat. Brown Gravy or Red Gravy ?? Bone in or Bone out ?? I went ahead and took the meat and put it in the freezer so I can do a finish product on a Saturday ...... in other wurds ..... one of mines Beer drinkin' days !!!! ![]() Good news is ...... we gots plenty of 'em ifin' we can just eat 'em !!!! ![]() |

Brooks, bein as how you are a legendary skwerrll hunter. You most likely have a method of cookin dem skwerrlls dat is down packed. I would suggest just use da recipe dat you know and like and just substitute nutria for skwerrll for da first time. If you still think sumthin is missin let me know. |

brown it good in a black pot with oil and onions and cook dat on a low fire for about 4 hours or untill the meat starts to fall apart... cest bon! JC... I'd trade mallards for nutria any day also... but there is no limit on the marsh cows. my dad has had nutria cooked just about anyway u can imagine. Nutria spaghetti is the nom nomz |

I don't know what happened to all the nutra on the river. Uually every where. I haven't seen one in awhile now. Beavers all over the place but no nutra. Stagnent lake nutra is like pond catfish to river cats in taste. |

Nutria is better than rabbit I think! We cook it quite often. We usually make a nutria swat 1-2 times a year a clean and freeze about 10 at a time for future sauces! |

My grandpa once cooked up a sauce picante when I was younger. Good stuff. If you can get past the thought of it being a rat, the meat is very healthy. It is herbivore and is a failry clean animal. |
