Oncall and I shot a couple of Canvasbacks this weekend. I plucked them and plant to smoke them on Thanksgiving. Can anyone give me info on time and temperatures to smoke them? Also, if you give any recommendations on a brine or marinades I would apprecite the info. |

My buddy stuffs them with sweet Italian sausage and smokes them for about 3.5-4 hours around 225-250 in his charcoal smoker. I put maple sausage on goose breasts and smoke them for 3-3.5 hrs at 225-235 then wrap in heavy foil and pop in oven for an hour at 350. |

i smoke alot of duck and i brine in soy sauce bout 2 tbl spoons of minced garlic then some brown sugar, for about 2 days then smoke on 175 for 4-5 hours, glaze some bbq sause or some honey or apricat jelly on it about 3 hours in |
