Post subject:  Baked stuffed catfish

Put that ol Blue Cat to good use. Sauteed up some shrimp & crab along with some onion, bell pepper and garlic. Season to taste. Pretty damn good. 30 minutes or so at 425*. :mrgreen:

Catfish fillets
8 oz crab meat
12 oz shrimp (I just use the small precooked cocktail shrimp)
lg onion
belle pepper
garlic clove

Seasoning:
Tonys
salt
paprika
basil
parsley
oregano

Preheat oven to 425*

Start by melting a heaping spoon of butter in a pot. I throw the crab, shrimp and veggies in the pot all at the same time and sautee down in butter till the veggies are done. At this point you could add bread crumbs if you like.

Place a layer of fish in a buttered pan. Sprinkle with a little Tonys and salt. Spread the crab/shrimp stuffing over the bottom layer. At this point you can add shredded cheese too. Add second layer of fish and then season with tonys and salt. I mix the remainder of the seaonings in a bowl and then sprinkle over fish. I do not measure but if I had to guess I use a pinch which is probably 1/2 teaspoon of everything except the Tonys and salt.

Place in oven and cook about 30 minutes or so. Fish doesnt take that long but I cook until the stuffing starts to firm up a little. Bread crumbs would make it a little crispy. Maybe spoon some of the liquid on top of the fish during cooking.
