Thought I would share a great steak recipe. I cut my steaks around an inch thick, which seems to work best with this cooking method.

Put a cast iron skillet in the oven and set the temp to 450 degrees.
Pull steak from fridge and pat dry.
Liberally sprinkle with salt, pepper, onion powder, garlic powder, paprika, and cayenne
Thinly coat with olive oil, flip it over and repeat.

Once skillet reaches 450 degrees pull it from the oven and put it on a burner at medium setting. Put the steaks in the skillet and make sure they are not touching each other. I do this outside on a turkey fryer because it smokes like a son of a bitch. Once they get a good dark sear (about 2 min) flip them and sear the other side. If the heat was right when both sides are seared evenly they should be a perfect mid rare in the center. Pull them and let em rest for 5 min before serving, these will be one of the best steaks you'll ever try!

i used to do them like that on a viking griddle. sear the outside and slow cook the inside. I don't know if you like grilled onions but after you pull the steaks put the onions into that skillet with the juicy's that our left over. oh man thats stuff is good

i find the trick to duck is the day prior. soak in milk coke or mustard. I also prefer to cook duck down to try and get rid of the game taste

Water soaking is good, I don't personally soak for 3 days but I am sure it doesn't hurt. As soon as the water is clean of blood, they are good to go. I also like to marinate or soak in Tiger sauce. But I can say that I did similar of this recipe with a canvasback that didn't make it to the pot in time, and it was SLAP YO MAMA GOOD. even with a can breast.

This is how I cook tuna slabs, it is indeed a very delicious way to cook any slab of meat.
