I cooked this last night it was awesome

6 duck breast filet ( I used gadwall)

Marinade
2oz Jim Beam
2oz olive oil
3oz teriyaki sauce
3oz of wocestershire sauce
2tbsp of minced garlic
1tbsp of Konriko chipotle seasoning
2tbsp of brown sugar

Mix all of the marinade ingredients into a bowl and place ducks in it. Let marinade overnight.

On a charcoal pit or gas grill bring the temp up to 400 degrees.
Take duck out of marinade and cook on the grill for 3 minutes on each side for med-rare.

WELL DONE!!!!!!! Might as well eat leather! you gotta try it red in the middle, the taste is totaly different. :mrgreen:

Sweet!!!! Over cooked meat is crap. Med rare is the way to go!

Yep if you over cook duck you may as well go eat a pile of dog crap. Cooked too long it gets tough as well as a stronger taste. Last night my buddy grilled some goose filets that came out great.

Well I don't over cook it, just thoroughly cook it with maybe a shade of pink in the middle. Not dry at all...

I like mixin jalapeƱos with cream cheese and putting a spot on the fillet then wrapping it with bacon and grilling it med rare....

Ive got some breast cut into strips that I have marinating right now in like a bloody mary type marinade. slice of duck breast, slice of jalapeno, slice of mango, and wrap it all with a slice of prosciutto.

Lol last duck season me and a few buddies of mine went hunting deep down in the swamp in waiters and after nearly limiting out the cold was kicking our ass and had to break ice out from around all morning we decided to get the hell outa there when we finally loaded up in the boat with our stuff the motor wouldnt turn over,battery dead so we called another guy to come get us and it was gonna take him a while one of my buddies ended up eating 2 wood ducks cooked over an open flame hahaha
