Been putting quite a few snappers in the boat lately, got 2 sitting in the boat as I type. I have a few recipies but am looking for something different to mix it up some. Looking forward to seeing what you got.

I have fried them, made turtle Sauce Piquante, wrapped in bacon on the grill and soup. Just seeing what else is out there.

All depends what is leagal down there. Certain areas up here we can use set poles, but where I am located we can't. I just walk the creeks with a metal pole poking around. Thump= turtle ding=rock Pole sets are by far the easiest. 4/0 hook, heavy line and chunk of fish.

When I was young way back when, they didn't have regulations for a lot of things and us poor people (my moms brothers) would walk in creeks with a pitch fork looking for air bubbles. When they seen them, they would push the pitch forks into the water-till they came into contact with what moved, they would stick it into their shells and pitch the turtles onto the bank and us boys would go grab them :D

Sauce Piquante
Mine is pretty easy. Start off with a Magnalite pot.A couple pounds of turtle meat.Brown meat in a little oil and set meat aside.Cook a yellow onion,a bell pepper,one of those store bought packages of celery and a couple bunches of green onions in the meat drippings.Add a large can of stewed tomatoes or a quart bags worth if you have any in the freezer.Add 3 cans of tomato juice.Add 3 tablespoons of roux-I use the store bought,generally Karys you can make your own if you want.Simmer tomatoes,juice,veggies and roux about 30 minutes.Dump everything in a crock pot and add salt and pepper.Turn on high and come bach bout 5-6 hours later and make a pot of rice.

Goose have you ever looked up a recipe for Burgoo for your turtles. We make up several gallons of burgoo using turtle meat every year and freeze up in one gallon zip locks. Mighty tasty during the winter. For those reading this look up 'burgoo' and give it a try. Really popular in Kentucky, Indiana and Illinois for a reason. I usually make it in the late summer when everyone is done with their gardens. I make my burgoo with fresh turtle and fresh vegetables.
