made my first gumbo with homemade roux last night - thanks to this cooking forum it turned out great . . . roux took 1hr and 20min to get right and dark enough . . . but it was worth every minute . . . |

Was thinking the same thing...80 minutes to make a roux? Did you make 50 gallons of it or something? I have cooked 3 gallons of gumbo in one pot and the roux for 3 gallons only took 20 minutes over a medium heat. You're doing something wrong bro or you're calling something roux that's not really the roux. BUT...in any event if it was worth every minute you must have enjoyed it. |

well i made alot and i think actually you're right about not taking soo long . . . i might have used a little too much, however the longer it took to make the less house cleaning i had to help the lady with so . . . win win ha i had it on low heat too which is why it took so long - i had always heard not to cook it fast - ill turn up the heat next time and get with it thanks for the feedback |

You will be safe over medium heat. I would not recommend going higher. The key to roux is a slow constant stir with a wooden roux spoon. Invest in a good one if you enjoy cooking it. I have one handmade out of sinker cypress and love it! |

I cook at times for 300-400 people and make a roux in under 1/2 hour. Key to roux is get it hot and stir lol |

If I'm gonna cook something that requires a roux it's usually at the camp. That also requires a large glass of brown drink. The longer it takes the better I feel |
