I've not been able to buy any head cheese to suit me. I had helped a guy butcher when I was a teenager and contacted him to see if he was still selling head cheese/sausage/etc. but he had quit after his brother in law got hurt and couldn't help. Anyhow, he was kind enough to give me his recipe and I'll pass it on. I don't think he would mind. I'll get it for you. I've moved since I received it, I hope I can find it. It's really simple and just the way I like it. No big chunks of bs like the souse you buy in the store around here. This is old school head cheese (for this area anyways) and slice it like salami, just not quite that firm.

I make it with Boston Butt and Jello Clear Gelatin. I make it off the cuff, would have to sit down and write it. Used to use the feet and stuff, but just not worth it. Had some in Paris two nights ago made with rabbit, think I'm going to try that when I get home along with the French bread again....
