Everyone does it different but Im too chicken to experiment on a sack of crawfish ($). I just use store bought seasoning, usually the lousianne yellow bags but also zatarans or cajunland are also consistent. I put half a bottle of liquid crab boil and a cap or two of extra cayenne. I boil for 6 min then cool the pot with water. Soak for 15 min and check taste. They always pop out the shell. For the 2nd boil I use half a bag of seasoning and a little more liquid crab boil. 3rd boil I change the water. I've been doing it that way for years and years and had no complaints. They are good but not great.

Some of my favorite crawfish is from the crawdaddys drive through at breaux bridge and I-10. I don't know what they use but it is the bomb and has something different that I can't place my finger on it. Im thinking they add chili powder or something. Also, I do it the New Orleans way were we soak the crawfish and not steam them.

Any opinions on the swamp dust seasoning? Anybody have a good home made seasoning recipe they want to share?

I use a jug if zatarans,1/4 container of salt, half bottle of liquid boil and lemons for flavoring. Boil 2 minutes soak for 45.

My ingredients. I do add a crab boil bag or two for added seasoning for the spicy people on the second batch. Note: liquid boil bottle is pint size in this picture. I normally get the smaller bottle and use half of it. ImageUploadedByTapatalk1367066128.013551.jpg

I just use a bag of the yellow Louisiana crab boil, cut up lemons, onions, garlic, and a stick or two of butter in the pot. Then throw some mushrooms in at the end and its hard to beat.

IMO the most important thing is to not over cook them. Boil for 2 minutes and then cool the pot down as fast as you can, then soak them til they sink.

You can boil crawfish for 6-7 minutes (but no longer) and they won't be over cooked. I boil shrimp for only 3 minutes but let crawfish go a little longer.

Also prop the lid open a little on ur ice chest if they r gonna sit awhile cause they will keep cookin from the the heat inside of it

If I boil shrimp more than 3 minutes they are hard to peel and mushy...3 minutes is the ticket

The trick to shrimp is to boil for about 1 min and cool the pot and put ice in the water. They will peel easy then.

Im still waiting for a home made crawfish recipe. Not the store bought seasoning. No one???

Try this on shrimp. Boil in plain water no season at all. Take a different pot bowl and put just some warm water it and season to taste as you want. Once shrimp are boiled drain water and poor in to other water. Let sit and taste till your desired season. Every shrimp in their will peel with ease

the biggest part of consistent boil time and seasoning most people dont think about is the amount of water. i have a fill mark scribed in my pot thats just right for a 35-40lb sack.

Seasoning ill usually do:

1 container of Zatarains Pro Boil
4-8oz of Zatarains liquid depending on whos eating
1/4 container salt
handful of bay leaves
celery flakes
squeezed lemons (occasionally a few fresh local oranges)
sometimes i also add the zatarains bagged dry seasoning too

boil 5 mins shut down to soak till they taste good! i dont usually have a set time to soak as the size of the crawfish usually dictate that.

i do like to throw in the frozen corn and a bag of frozen meatballs when i shut the flame off as well as hose the pot down, stir, and lift and lower the basket to help cool it down quick to help soak up the juice.

When we do them we follow this recipe and it hasnt let me down yet. when we cook them we usually have 2-3 sack's.

1. fire up the pot.
2. purge the crawfish by adding 2 large 1lb containers of salt to a 40 qt cooler full of crawfish and cover with water.
3. while the water in the pot is heating up i add one full 4lb container of Zatarain's regular crab boil, 2 halfed lemons, 4 oz of liquid boil, 1 stick of real butter not margarine, and 2 bags of dry boil.
4. drain the cooler and rinse the crawfish. the are usually purged when you get them but i do this step just to be sure.
5. when the water in the pot has a rolling boil add 3/4 of the cooler of crawfish to the pot. i stir them every couple of minutes until the water has returned to a full rolling boil.
6. kill the heat.
7. keep stiring them every couple minutes to ensure they all spend some time soaking in the water.
8.soak to taste, usually are ready when they have all sunk.
9. remove and serve crawfish.
10. the next batch gets all of the same ingredients as the first added to the left over boil water from batch 1.
continue with this method until all crawfish have been cooked.
11. we add potatoes, corn, sausage, and mushrooms to the secon batch and so on as their is more spice in each batch after the first. and the more batches the hotter they get as the first timers who dont like them spicy usually drop out after only a couple pounds of the first batch.

8oz of liquid crab boil (I like the garlic one)
1 jar red pepper
2 boxes salt
cap full of garlic oil
cap full of lemon oil

You need 2 pots

put about 1-1/2 to 2" of water in one and half full of water in the other

add all seasoning to the half full pot and bring to hard boil then take off fire and add bag of ice

Put on pot with the little bit of water in and put on lid -- when steam starts coming out put crawfish in and cover. When steam comes out steam them for 7 mins. Remove basket and place in seasoned water -- add a bag of ice and cover for 30 mins

May seem complicated but if Im boiling crawfish its a social event not just tryin to hurry and boil em. Its not that complicated really.

I agree its the best way to cook em. its hard to mess em up and they ALWAYS peel easy,

I do crabs the same way. They come out perfect every time --- I use the ice to stop the cooking process quickly --- I bring the seasoned water to a boil so all the flavors marry and arent just sitting in the bottom of the pot

Now shrimp is cooked totally different but use the same seasoning

try boiling with oranges instead of lemons, whole garlic, some shrooms, fresh sweet corn, irish potatos and smoked sausage. my grand father makes his own boil, im not allowed to know it yet. boil for ab 5 min then shut it off and spray the pot down so it makes the shell expand causing it to make them more juicy and let it sit for ab 30 min.

crabs just boil till they float(blue crabs)
take u 2 sticks of butter and put it in a lil pot put fire on low. u will notice it will start bublin thats good. when the bublin has stopd put it on medium heat and cook until the bubling starts then stops, when it stops it will be much thicker than melted butter. u can dip the crawfish or crab mead in it if u feelin fancy. or if u tryin to impress some poontang

you provide best information about crawfish recipe I am very much interested in which is energetic food type with lot of proteins and other things and same time always using lemons to give different taste but now will use oranges make different color and taste too thanks for sharing this recipe.
