Re: Baked speckled trout recipe?
Funny you ask,,,I just cooked some and was going to share the recipe'.
When i found it, i was called Saute'd redfish. Of course, you can use whatever fish you want.
You take the fish fillets, dry them off, then drag one side in flour and before you flour the other side put salt on it to taste. Then after you batter both sides, Douse one side with LA hotsauce. It will make one side look like a pink redish paste. Put bout 1/8-1/4 of olive oil in the pan and then pan fry them on Med-high for about 2 mins on each side hotsauce side down first...
Something different besides the fried stuff....I even used that red chinease hotsauce and it was good.
So far,,,i have not found anyone who didnt love it.

Season filets with salt and pepper and cayenne and put in oven for 5 min on 350. Take out and drain excess liquid/water. Pour warm sauce around filets and not on top if them. Sprinkle Parmesan cheese on filets and bake for another 5-10 min. Dip French bread in sauce.

The recipe was good but cut the sauce ingredient amounts in half. Say too much sauce.

Here's one Ingredients: Speckle trout Creamy Italian dressing Large bag of potatoe chips Large bag of shredded cheese
Place layer of fish in deep baking pan , pour dressing over fish , crush chips in the bag, pour cheese in bag with the chips , shake to mix well and pour over the fish and dressing , bake at 350 for 20-25 minutes. Your choice on chips and cheese . It's always worked for me.
