I make some mean scrambled eggs, but I suck at omelettes! I can't ever seem to get the flip right or it's burned or under-cooked. I don't know if it's the pan or I have the heat too low (or too high) or what.

One of my favorites. This one had andouille ,onions, a couple different peppers and smoked gruyere.
