Before my trip to Scottsdale, AZ today, I had to make preparations for trip to Louisiana on Saturday. I get home Friday night and will be leaving out for LA on Saturday.

My guide named his fees of 2 smoked Boston Butts and I was more than happy to pay that fee. I also figured that I would mix in a little something extra by making up a batch of my pickled eggs. I boiled up 18 eggs and while peeling them, I tore the whites on two of them - to the point where I didn't want to put them into the brine - so I set them aside and finished the jar of 16 eggs. They are now marinating nicely in the fridge.

As I was preparing the butts for their 22 hour smoke, I looked over and saw those 2 rogue eggs and the idea hit me. I have been wanting to smoke some boiled eggs for a while now, but the opportunity just never presented itself before. No time like the present, I said. Put the two eggs on the Big Green Egg as the temps were getting up to 220 degrees and they were engulfed in the hickory goodness. I guess that they were there for about 10 or 12 minutes and they were a nice, deep tan-bronzed color. The initial taste was a bit strong on the hickory, but not in a bad way. However, the lingering aftertaste was awesome! I highly recommend this and will be doing it again soon myself. Just watch your temps and time because the eggs seemed to be beginning to dry out a bit.

And if my guide is reading this -- although I don't have any more smoked eggs left, I will be bringing another little something along as a tip. It's not Old New Orleans Rum, but I think that you will enjoy it quite well...

See if you could bring your guide some sauce.It is the only one that one his friends wife will eat.I have even see her eat that stuff on toast in the morning.

good deal.... the trout are starting to move in here. and the reds are feeding a lot too. i was in the pond the other day and could see the fins from them chasing mullet. after the hunt this weekend ill let you know how it goes.
