Anyone ever use there duck meat for sausage or burgers.Thinking of grinding it up with some pork,But don't want to waste it if it taste like shiat. Thinking of dried duck sticks.Like a slim jim. |

I was trading it for fresh oysters off the boat..But the bay is closed due to people getting sick in Alabama and Carolina..That was a good deal!!! Bag of duck breast for a 110lb sack of oysters.Now i have to much of the shiat and need to do something diffrent with the duck and goose. |

I've had it in a meat stick like a slim jim.... damn good shit. Been thinkin about cleanin out da freezer and makin sausage with any birds I found from last yr.... but then da season started & I remembered why I hide those birds way back in da freezer to begin with. lol |

ive made sausage wit it b4 john, and i can tell u that its strong, so u need to use a 70/30 mix...30 bein duck...get u a boston butt, grind it up, season and case it...really, really good shit! any q's, pm me shaun |

I'll check with my cousin he gets some made by a guy that he sees at the New Orleans DU banquet.I've never tried it but I heard it was very good. The guide that we used in Boston for the sea duck hunt took all the birds and made sausage with them,I never tried it.It got shipped to one of the other guys and he was not impressed with the Eider sausage. |

DUCK CHILI Just grind the duck breast up like hamburger meat and use it like you would making regular beef chili. It is darn good and especially on a cold day. But I'm sure I didn't need to tell y'all that. Anything taste good in chili. You could probably grind up a turd instead and it will taste alright!! ![]() It even works well with geese!! |

Simple mix for me. Take duck birds out of freezer, walk to pick up, get in, drive to Kuby's and give them the duck birds. 2 weeks later repeat process, minus getting the duck birds out of freezer and add in writing a big fat check to Kuby's and I am done. |

I have sticks made every year at a local locker. Usually they are about 70% goose to 30% duck. This guy makes jalepeno and cheese, barbeque, and plain. I think he does 30% pork. i can't find any other way to eat all that goose meat. |
