I like to take the biggest sumbeech yellar unyon I can find, cut out part of the middle from the top down, put about a 1/3 stick of butter in the hole, and then season the heck out of it with Tony's and cover it with alumnum foil and sit on a grill for about an hour in indirect heat. Smoke a fine cigar or two and down some Shiner Bocks while she cooks, then throw on a big fat filet and cook it for about 4 minutes on each side and dig in.

Friend of mine takes big yellow onions boils in crab boil guts them and then stuffs them with a rice dressing or crab meat stuffing throws them in the oven for a little bit,man you talk about good. By the way capt they are opening a new brewery in na'lins,its going to be the NOLA brewery or something like that.Should be up and pouring in a couple of weeks. |
