I had to work the night shift this Thanksgiving and decided a little chow for latter on might be in order.

Rubbed down one chicken and one duck with kosher course salt and then covered in browning sauce. Put an onion inside both, and then sprinkled on some Uncle J Cajun seasoning.

Slow cooked in cast iron over four cups of brown rice, one bag of carrots, and six cups of water.

I love how the rice soaks up the fat from the duck and chicken.
