I have an 18x50 Huntdeck which is actually 19.5x50. It is a little slow when empty but doesn't loose too much speed with a load. If you get it stuck by yourself you're stuck but if you have a friend or two and they get out it will usually come out of the water enough to get back to deeper water with little effort (stuck within reason that is). There is alot more to hide when hunting and small creeks can get very skinny, which can be a pain in the ass if you are wanting to turn around. Unless you are mostly by yourself I think a 17-19 is a good all around size. You would need a minumum of a 35hp motor. I rode in a buds 17x50 with a 29 MBHS and it was painfully slow with 3 hunters and a hunt load.

I don't know how the 60 width will affect load or steering however.

As stated, 60" is a little wide and alot more surface to plane and run. It would be a very stable platform to hunt or fish out of. 18' is claimed by many to be the ideal length for load and performance balance.

I have a 1754 and that is probably the widest I would go, the next boat will be a 1851.

Dont see a down side other than running really tight ditches. If your not running skinny ditches with SHARP turns I wouldnt hesitate on this size. I love mine.
