Date formed The Henderson Lake area is a man-made lake formed in the 1930’s by the Atchafalaya Levee construction for flood control by the U.S. Army Corps of Engineers (USACE). The damming of Bayou Berard and other streams stopped the natural drainage of this area and caused flooding during low water stages. Most of the flooded areas were owned by St. Martin Land Company. In 1963 and 1964, earthen dams were constructed on the outlet channel. A permanent control structure was put in place in 1968 and set at an elevation of 7.5 MSL. Due to a written agreement with the St. Martin Land Company, in the 1970’s the elevation of the lake was increased to 9.0 MSL but would never exceed this height. The structure remained operative but siltation issues made operation of the structure difficult. Improvements and repairs to the structure were conducted in 1985-1986 and 2006. Minor work on the control structure was done in July 2013 to address mechanical issues. The damaged chain-link fencing around the structure was replaced in July 2014 in order to keep trespassers out. Since 2003, over $500,000 has been spent by St. Martin Parish Government on repair costs for the structure. (Guy Cormier, personal comm.). |

Don't thank me till you've tried it. I kinda figured it out by accident. I love apple butter on pork chops so I figured what the hell... Warmed it up so it would flow better. You don't want the pork real cold either. Man it's juicy and so damn good. I've even injected pork chops before grilling if they're thick enough. |

Seems like i remember a jar in the icebox at home long time ago. Im pretty sure somebody made it and gave to us. If i remember correctly, for whatever reason, it sat there a good while, then i must have been out of fig preserves maybe, then i "discovered" how good it was. And id be damned if it wasnt just gone before i knew it after dat. Ima get ma lil girl to pick us up some more and try the stores brand. Tks. |

Bake yourself 7 individual, very thin layers of short bread, after they've cooled, spread apple butter on each layer as you stack them on top of each other, leaving the top layer bare. Cover and refridgerate until the butter has time to soak thru the bread layers and moisten up. You'll hurt yourself! |
