Because you can just as easily end up with the worst of both breeds and in the end all you have is a mutt.
Most of the different working breeds have been bred for generations trying to improve the strengths of each breed, why would anyone want to try and undo that?
The Labradoodle is a perfect example. The cross (they are not a breed) was developed in Australia. In a recent interview the person trying to develop the new breed wished he had never started and he no longer does any of that breeding. He ended up with a mix that has numerous behavioral and health issues and were no more hypoallergenic than the breeds he started with.
Pick the breed that does what you want and stick with it.

I don't know much about dogs, but I am very impressed by my mutt at home. She's a Lab and Irish Setter mix. She has a great head on her and tons of determination. She's driven to make me happy and is obsessed with the water. I just wish I had the time, patience, and knowledge to properly train her to her full potential.

I like my dog, judging by the name she is a mix. Part Rat and part Terrier.

It was once said that crossing breeds can result in a breed that has less heath issues and hunts better than either parent.

Eventually these dogs ended up being our labs, pointers, and hounds of today.

If you want the best of both worlds, give a Wirehaired Pointing Griffon a look. Mixing breeds is generally a bad idea.

No way you could do the culling required to make a good new breed today. PETA would burn down your house.
