you guys are pricks here And didn't help me. Here is the recipe. that I made. It turned out pretty well
I bought a Boston butt and boned it. I then chopped it into 2-inch pieces. I did the same thing to a pound and a half of pork liver. I cut up two onions 2 bell peppers and I half bunch of celery.
I added all that to a large pot and covered in two inches of water. I seasoned that with salt, pepper, cayenne, and added fresh bay leaf and thyne. I cooked that down for two and a half hours on low until the meat was soft. I strained it and ran it through a meat grinder with the largest grate I had. I made 6 cups of brown rice using the leftover stock.
Once the rice was done I mixed the meat and rIce. I then put it on to cookie sheets about an inch thick and let it cool.
I then used my meat grinder which has a casing stuffer and made Boudin.
It made about 7 or so pounds of sausage and I kept two or three uncased to make boudin stuffed items

Idk how to make boudin so I wasn't gonna help with a fake recipe, did it turn out better than store bought?
It's simple. get a mud motor. shoot ducks in the face.

How was the "liver" taste? I can handle small amounts but once it is too strong I won't eat it. Don's and the best stop have the right amount

Around February I'll prolly make a much larger batch. I also will probably smoke it when I bring it to the camp because we have a smoke house there

If I want boudin I stop at a few joints around/near Lafayette when I go thru that area. Best in the world! Buy a chit load and freeze it.

Billy's smoked boudin is the best in town.
Nunu's in Youngsville also has excellent options.
