Re: Shrooms I make a roux the same way I would for a brown Gravey. I use a box of chicken stock, one can of regular rotel, a can of diced tomatoes, a can of stewed tomatoes, (add water if you need to make up for the level in gravey) and then however the hell you like seasoning stuff. And depending on how big your making it depends on the amount of tomatoes and chicken stock you add. One day I'm going to stew down fresh tomatoes and see if that makes it that much better lol

Re: Shrooms I had to resurrect this post. The wife n I were playing with our son in the yard today and these guys were just hanging out. We live in town, no real woods or anything on our property so this was pretty surprising. They'll go great with some steaks tonight!

Re: Shrooms We usually get a lot of them here once the weather gets right. Its usually too many to fry up several times so I dehydrate them.
Then we use them in recipes throughout the year. You can also rehydrate them with some kinda salty water and fry them up and its good, although it isnt the same a fresh ones. The juice that you used toi rehydrate them is awesome in some recipes as well... its very mushroom tasting.
One guy I know (not really well though) cans them in mason jars in a brine. Its amazing, but he doesn't give away the recipe. You have to use small ones that are less than 1.25" all for that and keep them whole.
A couple more weeks and they will be going strong here (I hope).
