I've had rabideaux smoked deer sausage that you buy from a store and it was pretty good for store bought deer sausage.

I know Rabideaux's cracklins are about the best I've had from a store but damn they're expensive. I guess I got spoiled to making mine in bulk once or twice a year here at the house or at the camp.

No I used hog casings on them and thanks I really like making them , also used some powered milk for a binder.

Do you have a fan in that bradley or do you rotate the trays while smoking? Heard of issues when smoking on racks that it wouldnt come out with an even color.

Can you smoke any deer sausage? Or does it have to be a certain kind or mix?

I'm sure you can smoke any kind although some will lend themselves better than others , just make sure you cure in them, if not keep the temp on 225 or better.

Good luck just make sure you at 225 deg or you start playing with a chance of botulism. :shock:

Like how much season for 1 pound? How much and what kinda cure do you use for 1 pound?

My main question is on the cure! Do yall use it in your smoked sausage? I have Morton tender quick, but it's way to salty! What type do you use and how much per pound??

Insta cure number 1 yes you need it as long as you are smoking it at temps below 225.

Found some LEM #1 at BP!! So got a Boston butt and made a few test batches! We'll see how it turns out tomorrow when I smoke it!!!
