Looks good. Trying to decide how I want to cook my first batch of ducks for this season. I dont possess the cajun rice and gravy skills though. |

Brown ducks in a black iron pot. When u think they Brown. Brown them some more .Take ducks out. Add unions bell peppers and celery. Cook them down untill translucent. Add about 2 inches of chicken stock. Then about 3or 4 cans of mushroom sauce. Then some tonys seasoning to taste and add a few dabbs of Worcester sauce. A dab of kitchen bouqette for a darker color if desired.Then add ducks to pot. Add water or chicken stock to get half to 3/4 of duck submerged. Bring it back to a boil and stick it in the oven covered for 3-4 hours at about 275. Or untill duck is tender. |

I brown some more then add this and cover with water, put lid on and let cook on medium for 1 hour or until tender or 1 case of beer. image.jpg |

Cook rice. Heat can of Lima beans and put some of your pot gravy in there for flavor. Msm8281's methods are suspect. |

Looks awesome love teal prob in the top 3 ducks IMO. Cans and wood ducks are my other top 3 favorites. Cans that have been in the wild celery and wild rice are the bomb. |

I stated browning the ducks at 5:59 pm and served my first plate at 9:00 pm. The last pick is of my second serving taken at 9:16 pm. If I'd have had more time I would have stuffed the breasts with garlic, onions and seasoning, too. |

I browned those ducks in extra virgin olive oil, btw. It's all I use nowadays. Very high flash temp. |
