I've made jerky out of puddle ducks, diver ducks, geese, and sea ducks. Coots should be no problem.

They fall apart in a gumbo. Those big ass gizzards are quite tasty also. But then again this generation probably doesn't know what a gizzard is much less how to clean one.

I've heard many making goose sausage.
Grind up the breast, add in some pork and seasoning, mix it up and put it in a jerky gun. I do suggest letting the meat bleed out for a couple days in the fridge refreshing the water every day. It gets a lot of the blood out of them. You could even dress out the gizzards and grind them too.

I'd try it for sure.
