I've made jerky out of puddle ducks, diver ducks, geese, and sea ducks. Coots should be no problem. |

They fall apart in a gumbo. Those big ass gizzards are quite tasty also. But then again this generation probably doesn't know what a gizzard is much less how to clean one. |

I've heard many making goose sausage. Grind up the breast, add in some pork and seasoning, mix it up and put it in a jerky gun. I do suggest letting the meat bleed out for a couple days in the fridge refreshing the water every day. It gets a lot of the blood out of them. You could even dress out the gizzards and grind them too. I'd try it for sure. |
