 you guys cure or age your fish?
in the last few years ive cured my catfish like deer meat. i leave filets in ice and water covered in salt and change water everyday for a week. then freeze in bags of water for later use. i can thaw these and soak in milk then fry with house autry and its purty good. you guys know any different ways that you would share?

I fillet mine with an electric knife, put in a bowl of water, wash the fillets good with fresh water and put straight in the freezer, ive never heard of people doing your method

that's a lot of work for some fish, but hey, if it's good. My grandad used to layer fish and salt in a bucket and leave them there for years sometimes. It was pretty good.

Nope never done it that way. I put meat in a brine from time to time to soften them up a few days before i cook it but never soak them in saltwater before i freeze them.

fresh gar is way better IMO, just dont freeze it, eat it that day. No fishy taste at all, trust me

I don't freeze fish very often. I typically eat fresh. This is one of the benefits of South Louisiana living.

yea i like em fresh too and gar medallions are the way we do them. i started using the technique after the we started catching more blues than flatheads. they eat alot of freshwater mussels and it changes their taste. 5-8 lbs is the best anything bigger goes back. got a 59lbs blue last year and tried to fillet and it was all blood meat.

I fillet mine out then let it soak in saltwater over night. I like to freeze mine in the plastic foldgers coffee cans full of water. They are perfect size for a meal and no freezer burn.

I eat mostly specks. We clean em wash put them in a quart size bag with freshwater. The quart size feeds the average family of 4 and freezing them in water prevents the frost bite. It seems with white trout you gotta eat them first because they get mushy. That maybe the water we freeze then in. idk but they are darn good fresh

Vaccuum pack em -- no water -- pat em dry and they will taste like the day ya caught em ---- well other than them damn white trout -- they still get mushy
