Kidding. Sort of.
Here and whoa are all you need to teach a bird dog. Heel is nice also, but not always needed. Get the pup around bird scent every time they are aout. Wings at first, then hobbled pigeons, then pigeons with a tether, then quail. Let them knock and chase and get fired up over birds. You can reign them in later, but it's harder to light that fire.
Yard work: Get a good stiff check cord. Hold the end of it and when the pup is about to pull it tight, say WHOA. He'll stop on the rope. Do that about 50-11 million times and the dog should be pretty steady.
Put him back on birds and let him knock them. Then say whoa and stop him. Work back to steady. If you try to nickel him up to be steady from the get go, he'll hate it and fight you.
Lots of good books. Bill Tarrant, Delmar, Paul Long, Al Brenneman, Sherry Ray has a good video, Ferrell Miller has a good video, but I'm not sure if a Brit could take his methods.
