 Cool Boiled then Fried Crab concept
In lake Charles, on the westbound side(before big bridge) there is a restaurant called Steamboat Bills. They have a dinner called Fried Boiled Crabs. I've never eaten or even heard of this concept before. It was really good, and half the mess that just boiled crabs. If you've never had it, if you are in the area, stop by. It is 14.00

When I fry crabs, I boil them first for 3 minutes, let drain and cool, then fry them for 4 minutes like Sartins in Beaumont with no batter but tons of Sextons zestful seasoning (kinda like a cajun season-all with a hint of bbq)

J just clean live crabs like you would be throwing in a stew or gumbo. Drown them in Tony Season and deep fry. No need to boil first. You'll be licking your fingers for hours.

Boiled??????  no way, gotta steam them with some McCormick's Old Bay and salt on them. That'd be the proper way to fix them. But I'd try them boiled and fried once......to prove I'm right.
