Anybody that makes bread have any simple bread recipes?

Here's the one I make the most. You ever make beer bread?
2 packages (1/4 ounce each) active dry yeast 2 cups warm water (105° to 115°) 2/3 cup nonfat dry milk powder 2 tablespoons butter, melted 2 tablespoons sugar 1 tablespoon salt 6 to 7 cups all-purpose flour
In a large bowl, dissolve yeast in warm water. Stir in milk, butter, sugar, salt and 4 cups flour. Beat until smooth. Stir in enough remaining flour to form a stiff dough. Turn out onto a floured surface and knead until smooth and elastic, about 10 to 12 minutes. Place in a greased bowl, turning once to grease top. Cover and let rise in a warm place until doubled, about 1 hour. Punch down and divide in half. Shape into two loaves and place in greased 8x4-in. loaf pans. Cover and let rise until doubled, about 30 min. Preheat oven to 400°. Bake 20-25 minutes.

Here's a simple recipe for the beer bread - I use it quite frequently and it is good just plain or with optional ingredients : 3 cup Self Rising flour 1 /4 cup Sugar 1 can warm beer Optional – shredded cheese, jalapeno, (real) bacon bits - can't tell you actual amounts - I tend to "dump" cook when adding these
Mix and put in sprayed bread pan
1 /2 cup melted BUTTER poured over top – crisp crust (or mix melted butter into dough for soft crust) Bake at 375* for about 60 minutes Makes 1 loaf

Have you ever read Tartine Bread? Growing up, my father used to make good French bread, and after reading this book, I decided to try it myself. It's not something you pick up quickly even though there are only four ingredients (flour water salt yeast); the trick is fermentation. Its the difference between an Oscar Meyer Weiner bun and a loaf of true french bread. It took me about five different times, and I even ended up growing my own yeast ( pretty easy actually). My dad even said it was better bread than he ever made. read the book....
