Pickles?
Anyone have a good pickle recipe? I'd like to start doing some.

Although we've always done our recipe for Dill pickles by scratch in the past, about 5 years ago my wife bought some Mrs Wages dill pickle seasoning on "after season" clearance - got 20 packets ( each makes 5 or 6 quarts depending on how you use it) for $0.30 a pack. We both agreed that Mrs Wages had a better flavor than our original recipe, so we have done the same "buy the end of season clearance" packets ever since. I think this year she got them for $0.75 a packet (inflation?)
The key to crisp dill pickles is not to "cook" the cucumbers during the hot water bath used to seal the canning jar. We don't do a traditional hot water bath on our pickles. After cleaning your canning jars and lids, Pre-heat your jars and lids in a large pot of water ( we use a pot that holds 6 quart jars - if you have room on the stove, the lids can go in a separate smaller pan) - pack the cucumbers into the jars while you are doing this. At the same time, have the seasoning mix cooking - when it gets to the point of wanting to boil, pour it into the cucumber jars and put the lids on - then remove the jars from their pre-heat pot and place upside down (lid on bottom) on a towel on the counter, then cover the jars with another towel to slow the cooling process - you have now provided enough heat to seal the lids without "cooking" the pickles in traditional hot water bath

It's 2-1 water and pickle vinegar and I forget the salt make sure you put a bit of alum in each jar for crisp ness. Stuff jars with garlic cucumbers and dill and about five habeneros. Then poor the brine once boiling in the jar and screw lid on tight bake in oven at about 190 for a couple hours. You can google the mix for the brine.
