Post Looking for Chili recipes.
I'm looking for a decent Chili recipe. Going to using a crocpot, and no beans. Was just going to wing it, like I usually do, but figured I'd see if anybody had one that I should try and that they wouldn't mind giving to me. I appreciate it.

I like the Wick Fowler Chili Kit...

However his chili powder is not to my liking - so I use Gebhard's instead
and some nice diced tomatoes too...

Half venison @ 1 lb and half chili meat beef @1 lb....

I brown the meat and yellow onion off in a big cast iron while addin a small
amount of the cumin package and red pepper as the meat is searin and then
toss em in the crock pot and start adding the rest in....

The seasonings are pretty well done and it is quick and easy which is
a good thing if your also drinkin a cold one or three....

Ingredients:

2 pounds lean ground beef or deer meat
1 (8 oz) can tomato sauce
1 (6 oz) can tomato paste
1 (16 oz) can stewed tomatoes , optional
3 tablespoons Gebhart chili powder
1 1/2 teaspoons salt
1 teaspoon LA hot sauce

Brown beef in a large skillet; drain well. Combine with remaining ingredients in slow cooker. Cover and cook on low for 7 to 8 hours. If you like beans in your chili, add a can of (drained) pinto beans or kidney beans.
Serves 4 to 6.

So I got out of work last night, and being as impatient as I am, stopped by the store on the way home and picked up some stuff and winged it. Turned out pretty decent, and even though it's a little unorthodox, this is what I ended up doing.

-1lb ground beef
-1lb ground pork
-1/2lb chicken approx (had it in the fridge so I boiled down the carcass instead of letting it go to waste)
-1lb venison stew meat.
-1 Lg sweet white onion (little over a half pound I think)
-1 can of corn and all the corn water that was in the can
-1 14oz can beef broth
-1 15oz can Hunts tomato sauce
-1 12oz bottle of Abita Turbo Dog (It's piss that's only fit for putting in a crocpot or throwing at hobos begging for money along the highway. Seems like it tries to be a brown ale and a porter at the same time and doesn't do either very well. Happy that I was finally able to get it the hell out of my fridge. Now there's more room for good beers like Southern Tier IPA.)
-about 4 Tbsp Chili Powder (of course)
-1 Tbsp Paprika
-1/2 Tbsp salt
-1/2 Tbsp ground pepper
-2 Tbsp garlic powder
-2 Tbsp brown sugar
-green Tabasco (no idea how much)
-Worchester sauce (about the same amount as the Tabasco)

I used a Crocpot
-Chopped up the onion and threw it into the pot
-Poured the beef broth, corn, beer, and tomato sauce into the pot
-Boiled the meat off of the chicken carcass and then threw it away so my dog would later sneak into the kitchen and pull it out and make a mess all over the floor even though I gave her a marrow bone to chew on to keep her out of the way. Threw the chicken into the pot.
-Boiled the venison to unfreeze it and got brown venison juice foam all over the stove when it boiled over. Threw the venison into the pot.
-Browned the pork and beef, drained the juices and threw it into the pot.
-Threw the spices into the pot.
-Turned the crocpot on high and went to bed since it was three in the morning. Was done when I got up at the crack of eleven fifteen this morning.

Things I would do different. - Little bit more liquid than I like, so next time I'll probably go with tomato paste instead of tomato sauce, and possibly double up on the paste as well. Had the crocpot going all day on low with the vent open figuring some of it would evaporate. Hopefully my house didn't burn down because of it. -Less onion. Maybe half of what I used. -More heat. Definately no where's near as spicy as I like, but it's easy enough to add more.

I just use the 2Alarm kit. 12oz tomato paste instead of the 8oz sauce. 2 lbs of meat per kit. Beans don't belong in chili........... :lol:

This is a good one:

- 5 lbs of chili ground beef or venison, haven't tried duck/goose yet.
- 1 lb "Hot" breakfast sausage

Brown meat and drain fat.

- 2 16 oz cans of Tomato Sauce
- 2 cans chicken broth
- 2 cans of beef broth
- 1 can "hot" Rotel
- 1 can diced Tomatoes ( add more if you like)
- 6 oz chili powder
- 2 Tbsp garlic powder
- 2 Tbsp salt
- 1/2 Tbsp black pepper
- 2 Tbsp cumin
- 2 Tbsp cayenne pepper ( a little more if you want it hot)
- 2 Tbsp onion powder
- 1 Tbsp Sriracha chili sauce ( add more if your adventurous)
- 1/3 cup of ketchup (don't laugh)

Mix all ingredients in a large crock pot or stockpot, add browned meat and simmer for about 2 hrs, stirring occasionally.

I'm big on the 2-Alarm mineself ..... it's a good way to start off yore Chili .... then put some magic too it !!! :D

I did one the other day and after I put the magic to it .... I added fully-cooked Pittsburg HotLinks to it ...... :twisted: Somebody Please Stop Me !!!!!! :lol:
