Ten year anniversary trip ideas?

 Ten year anniversary trip ideas?
It will be ten years this fall and we are both not coming up with anything exciting trying to plan a 7 day trip without the kids. Looking at going sometime from the end of the summer to mid fall. We both are pretty active and like to do things rather than feel like spectators. Some hunting and/or fishing is to be expected on a trip, but I don't want it to be just about me. The last couple of years we've traveled around Minnesota,Wisconsin and the Dakotas. We've had some great little getaways with the boat and some hunting and fishing mixed in. My wife is incredible, she tolerates a lot of ridiculousness with regard to working long hours, some travel on top of hunting, fishing and the madness involved. I'd like to do something nice for her, memorable and take advantage of still being young and healthy enough to do what we like to do. We are both scuba certified, don't mind tent camping and thrive on new places and exciting activities and out there people. We talked about Europe, but given we'll only have a week, we'd rather save that for later when we can be away for longer. New Zealand is high on the list given their waterfowl, red stag oportunities and brown trout the size of your leg, but we decided to save that until we can afford to do it right, and to maybe make some other stops since it's half way around the world. We traveled a lot while in our early twenties and found some great stuff on a tight budget. We're not rich, but way better off than when we were younger. Trying to keep the adventure and experience alive.
A few ideas so far are - Drive HWY 1 up the West coast Alaska - I have been a few times on fishing trips, not sure if I could control myself to pause from fishing or hunting to do other stuff. Not sure she'd be as enthused about cleaning and eating fish while being watched by bears. Mexico,Caribbean or Belize. Again, fishing gets out of hand and neither of us are much for lounging around too much, or zip lines and tours. Canada? New York City for a day and then head upstate see Niagara Falls, visit Canada, fish the ocean for bluefish or stripers, possible sea duck hunt. Texas-/Louisiana. hog or exotic day hunt, fishing, bowfishing, flounder trip- you get the idea...one day then tour around. I'm seriously struggling not to make it all MY trip, but balanced between some excitement, time enjoying meals,drinking, spending time alone without kids or work, seeing sights doing what people do. Never done a cruise, and am nervous I'd feel stuck on a boat, or the ports would be touristy. So what do you have for suggestions?

Ambergris Cay in Belize. Turneffe is really the best. Never do a cruise. Like being in prison with 20 million weirdos.

Cabo. Fishing is awesome. Literally designed to appeal to everyone. Can be done for cheap, just gotta be ready to straight up ignore 95% of the people you're going to encounter.

We went to Maui on our honeymoon it was awesome!! We plan to go back for our 5th or atleast 10th anniversary. We went for a week and did an adventure a day. Few things we did were, Zip line in the mountains (it's the world's longest zip lining) Snorkeling Whale watching, (awesome, can't imagine how big they are) Flew to Oahu and spent the day in Pearl Harbor And did a few other things if you want to know more.
I want to got back and do some marlin fishing.

My wife and I went to Hawaii for our 25th. We did a vrbo. Best trip ever. We are now looking at Cabo but our trip to Iowa for ragbrai has got us exicted.
